It's because in Japanese, death using katakana spells desu. So it's basically a play on words where people would normally assume she's using desu but she says it in way to make it sound like death.

To be precise: the difference between "desu" and "death" is that of emphasis; "desu" is "DE-s" while "death" is "de-S."
