    They already did in the late 19th centuary apparently, called the Jersey Giant, can reach up to a marketable 11 pounds (small end for a turkey). Seems like it fell out of favor because it took longer for it to develop than the commonplace chickens we use commercially today and I guess failed at its goal of replacing the turkey.
