Reimu would probably be Rider and Yuuka Berserker that's for sure. Komachi might be lancer or assassin and Medicine would probably be Assassin and Marisa would be caster.

I could definitely see Eiki as Saber, since she shares a few common traits with Arthuria: petite, flat-chested, and an annoying moralfag, though it's normal for the Judge to be like this.
