He can't make money as easy as he could a sword do to his Origin being a Sword making it easier for him to trace something like a sword into existence. And they don't last. Plus the image would be to complicated to make and than you have to figure he couldn't know how to make the thing they put in money to show it isn't a forgery. By comparison, a sword is far easier to make.

Maybe he could project swords and sell them for money.

That would make him a con artist since the swords would disappear after awhile and Shirou plays by a very strict code of honor so it's not something he'd be likely too do... unless he got really desperate.

Actually considering Shirou is pretty loaded, due to Kiritsugu setting up some sort of managed fund for him, he could easily give them their money.

Actually I found out recently that is fanon. Shirou's Projections actually don't disappear unless he feels there is something wrong or off about them. :D
