OK, but if magic is limited, and can't stop diseases, then wouldn't that just be a great way to free up those doctors so they have more time to focus on disease instead of injury? Why do they have to go out of their way to think up lame, flimsy reasons for why they don't have to go out of their way to come up with actual changes to the world. ("People enjoy injuring themselves if they can heal because horrifically painfully stabbing yourself and then getting healing afterwards feels GOOD! Yes, there's no giant, gaping hole in that logic at all!")

(For that matter, where are the alchemists who mix magical potions of curing disease or injury without having to be paladins?)

the consistency of this kind of thing isn't very relevant to the story, is all.

According to estimates from that era, the death rate rose almost 70 per cent overall across the whole Kingdom's population.
As the Paladins became more involved, the doctors and healthcare industry were significantly impacted.
Since powerful healing magic is available, many began to seek unlimited and unrestricted thrills in their lives.
Another factor is that the training of new Paladins are quite difficult...
As such, those people involved in the medical profession quickly went elsewhere...
But the Paladins' healing arts could only cure physical injuries, and is useless against many illnesses.
And so in that time many people died of the plague.
If the Paladins were to take on additional duties beyond keeping the peace and fighting in wars, their numbers would be spread far too thin.
This also led to many Paladins dying of overwork or having their mana drained beyond what they could take.
The most serious malady to society is, everyone began to stop caring about their personal safety.
Also, some people began to indulge in the feeling they get when the magic heals their bodies.
And in order to experience that feeling again, begin to engage in self-mutilation.
