Healer enemies aren't that annoying, but they are definitely up there on the prick list.
Opinions vary, but for me it's enemies that destroy your equipment that take that cake. Nothing says "screw you" like losing 30% of your weapon's durability every time you make a hit. It's practically an adventure killer, because of the backtracking you have to do to get the stuff fixed.

That's definitely up on my list, but what annoys me is enemies that either stun, poison, burn, or freeze you and then play that annoying game of "keep away" by staying just out of your reach. And then practically taunt you as your health slowly whittles away.

It depends upon the menu of the game. In some games, I'll just laugh off any status ailment that isn't silence or sleep because I can ignore a few seconds of poison damage, and it's only a single cure spell away from negation. (And silence is just reaching into my pocket for a curing item.) Equipment breaker monsters are much more serious, and I generally just run away whenever feasible (or use jackass techniques like throwing hoards of summoned monsters while hiding in a corner), since they're never worth the risk.
Healer tanks aren't necessarily bad, depending upon the game. (I mean, that's practically the definition of the standard paladin build...) You just need to do anything other than direct HP damage. (Which is why it depends on the game - MMO-style games force all HP damage all the time.) You can always just use the same silence + poison technique, or go for a SOD, depending on the game's rules, or exploit a weakness to physical or magical damage or whatever flavor of rock-paper-scissors the game uses.
Incidentally, except for that shield and maybe the boots, she doesn't look too tanky at all. She might be a special type where she can block ranged attacks from the front, but is vulnerable to anyone flanking her.
