Do you simply recognize it from this picture or perhaps know it due to knowing what's used in Girls und Panzer? Is there something that allows you to immediately say it's an AP and not a HEAT shell?

I'd say this is just generic shell cartridge drawing. German long 7.5cm (KwK 39, KwK 40 and PaK 40) cartridges were generally much longer than that and/or had prominent neck, while the proportion is incorrect for short 7.5cm KwK 37. This particular cartridge actually more similar to Soviet 76mm ZiS-3 AP shell.
Also, APCBC shell usually have conical shell profile (from the ballistic windshield), while HE shell have blunter ogive profile, though that's not universal. AP shell painted in dark green/black might be actually a thing.

Yeah, I also had a feeling the picture depicted quite a generic shell shape.
