You're supposed to use a bain marie (waterbath) for melting chocolate. This is because molten chocolate is really viscous ('sticky', 'syrupy') and is prone to burning on the underside if (the pot containing the chocolate is) heated over a direct flame.
Direct heating is fine when chocolate is mixed with other liquids though (like cream or milk or [enough] water), because the lowered viscosity helps prevent burning.
Well, if you're unfamiliar with the food and/or the preparation method, you'll likely mess up no matter how skilled a cook you are with your usual repertoire.
