It's because picking her in the original SNES version leaves the player feeling like a complete jackass because of various bad things that happen to Bianca. Even all these years later, it's kind of hard for the older fans to forgive/forget.

There's been polls in Japan. And every time, Bianca comes up as the post picked/more popular bride in DQV. So for the most part, there's just more art of her because she's more popular.
