I know this isn't the correct place to be asking this but; What is this type of animation called? What I'm referring to is how the animator takes a still image and squashes and stretches to mimic frames of animation? ( I only wrote here because it was the newest example of this style. )

If I was to hazard a guess it's either Spline animation or Live2D. Although, with that said, sometimes quality of the animations really vary - I've seen some that are worthy of "What the hell is that effect to her head?!" because the image "stretching" was distorting the size of the character's head.

It is sometimes called "Puppet Animation". Live2D and Spine are modern examples of software used for this but the technique/style can be traced back to Flash and other vector based + animation software.
