Huh? I only see Letty mentioning freezing in Marisa's scenario, and she assumed that Marisa was done in by the cold. No threats there.
In Sakuya's scenario there was some casual banter followed by her spazzing out about "a freaky flying maid coming towards me."
Her interview in BAiJR has her stating that she just wanted to tease Reimu. The only canon bit I know about her "dark side" would be her PMiSS article that says "Letty Whiterock is feared for ensnaring humans and freezing them, rendering them useless in combat."
