Unfortunately, this is pretty close to the official canon. The ending and post-game to Odyssey was the beginning of Mario’s humiliating ten-thousand-life banishment to the Friend Zone. As well as the beginning of Mario’s glittering career as professional punk bitch.
She was Bowser's girlfriend in secret. But, she just couldn't help herself here. The very idea of being Mario's girlfriend so utterly revolted her, filled her with such unmitigated disgust, she just HAD to break character and express her fathomless contempt for Mario, lest she explode into a volcano of profanity, blasphemies and curses in front of everyone to her own embarrassment. She declared her true sentiments for her champion with tremendous subtlety, diplomacy and finesse, I'll admit. But that doesn't take away the sheer hatred and maliciousness behind her sudden disclaimer.

This very piece is fanfiction. This conversation never took place in the games or in the movies or any medium starring the SMB characters, great or small. But, it perfectly encapsulates the dynamic between Mario and Peach. The ending and post-game to Odyssey has proven Peach cares little to nothing about Mario. She just uses him, both for her own amusement and because she knows it would be better to have him on her side than fighting against her.
But, if I'm so wrong, it should be easy to provide me with evidence, then. I welcome you to prove me woefully mistaken. I especially welcome you to prove me wrong because I would LOVE to be wrong. Which I'm not. But it would be nice if I was. Awesome, even.
