Probably because it's more realistic than the yellow eyes she officially has. She is human, after all.

Yes, eye colors like yellow and purple do exist in real life, but they're rare. I guess besides being more "realistic", it could just be a familiarity with the rather common combination of blonde hair and blue eyes.

In all likelihood, I'd have to agree.
